In an effort to get an early jump on holiday baking, I am in search of ideas for cookies to prepare the dough and freeze to bake at a later date. Any suggestions besides the traditional oatmeal or chocolate chip recipes? Just got those two into the freezer this morning! And yes, I admit, Jeb Stuart got a few licks off of the beaters! :) Thanks for the help, sure would like to decrease some stress this year!

Oh Rags - you have to make Snickerdoodles!!! They are perfect with a hot cup of cocoa, coffee or tea!!!!
Tell Jeb Stuart not to hog the beaters and Kadin and I will be over in a bit to help him!
 
Here's the recipe to save you a search:

Snickerdoodle Cookies

* 1 1/2 cups Sugar
* 1 cup Shortening -- soft
* 2 each Eggs
* 2 3/4 cups Flour
* 2 teaspoons Cream of tartar
* 1 teaspoon Baking soda
* 1/2 teaspoon Salt
* 2 tablespoons Sugar
* 2 teaspoons Cinnamon

Preheat oven to 375F.
Mix 1 1/2 c. sugar, shortening and eggs. Stir in flour, cream of tartar, and soda. Chill dough. Roll dough into balls the size of walnuts. Combine 2 t. sugar and cinnamon. Roll cookies in this mixture.
Bake for 8-10 mins., cool completely on wire racks.
 
my friend actually put a big chunk of snickers into the middle of the ball before baking.. came out sooooo good.

Mexican Chocolate-Cherry Rounds

Rich chocolate cookies get some Mexican flair when spiced up with cinnamon, cloves and cayenne pepper. Blanched almonds or pistachios can be used instead of cherries. I make these every year for Christmas and they're always a hit. Prep time includes chilling. ( I have also made this dough and froze it so it was available when I was ready to make the cookies :) )

Ingredients:
6 ounces unsweetened chocolate, chopped
2 cups all-purpose flour
2 tablespoons all-purpose flour
1 tablespoon ground cinnamon
2 teaspoons baking powder
1 teaspoon salt
1/4 teaspoon cayenne pepper
1/4 teaspoon ground cloves
1 3/4 cups sugar
1/2 cup unsalted butter, room temperature
3 large eggs
1 teaspoon vanilla extract
2/3 cup powdered sugar
60 candied cherries, halves

Directions:


1. Stir chocolate in top of double boiler over simmering water until smooth; cool.
2. Combine flour and next 5 ingredients in medium bowl.
3. Using electric mixer, beat 1 3/4 cups sugar and butter in large bowl until light.
4. Beat in eggs 1 at a time, then vanilla and chocolate.
5. Gradually add dry ingredients, beating just until combined.
6. Chill dough until firm, about 2 hours.
7. Preheat oven to 350°F.
8. Lightly butter 2 large baking sheets.
9. Place powdered sugar in shallow pan.
10. Form dough into 1-inch balls.
11. Roll each ball in sugar to coat; shake off excess sugar.
12. Arrange cookies on prepared baking sheets, spacing 1 1/2 inches apart.
13. Press 1 cherry half into center of each cookie.
14. Bake until cookies puff and crack but are still soft, about 10 minutes.
15. Transfer cookies to rack and cool completely.
16. (Cookies can be prepared ahead. Store in airtight container at room temperature up to 1 week, or freeze up to 1 month.).

Got it KMa! Thank you so much....it is printing as I type! I love anything with cinnamon in it! Jeb is still licking his chops from getting a bite of cornbread with cream butter on it! LOL He and Grandmom are out their snitching my kitchen's bounty! :mmph:

Thank you soooooooooo very much! This sounds so very festive and pretty! I like recipes that are unusual! Truthfully, I am not a cookie person, so I never know if the cookie actually "tastes good" or not. I am glad that folks here have tried the recipe and can lend me their opinions!

I bookmarked that site too. That's awesome! I love the Snickerdoodles as well. All warm and soft with cinnamon sugar on them. Ahhhhhhhh yummy. I use my grandmother's recipe.
