My sons b-day is on Saturday and he wants an ice cream cake. Costco doesn't make them anymore and I went to Baskin-Robbins and got sticker shock. They wanted $38 for a small round cake! I am thinking it wouldn't be that hard to make one myself. :convinced:

Walmart has good deals on ice cream cakes, although if you would like to make one yourself, Just bake a regular cake, carefully slice off the top of the cake, then scoop out a circle in the middle, add ice cream, replace top, frost and freeze. Might want to cool the cake very well which could take a good 2-4 hours, hope this helps!

I have actually seen this done before, although I haven't tried it myself.

I would make a 2 sheet cake the regular way..

THen you get icecream that comes in box form. Keep it out in room temperature for about 10 min.. depending on how hot it is that day. That way you can more easily slice it. Then you cut the box in half and layer the icecream on top of the layer cake. You might need more than one box of icecream depending on how big you want the cake to be.

Then you just place the second sheet cake ontop and place in the freezer. Also, remember to have the cake fully cooled before placing the icecream ontop.

When the icecream fully sets, you can ice the cake and decorate any way you would like.

I hope that helps.

I have seen recipes on the internet where it is made this way. I think I might try it. It's for 15 year old boys anyways. They'll eat anything.

Just a hint...we boys don't like store-bought chocolate, vanilla or strawberry ice cream.

We prefer hand-made (with the manual crank - not electric), hand-picked chocolate or vanilla beans and the little seeds removed from the strawberries.

$38.00 is sounding better and better isn't it?

In our town everyone get their icecream cakes at Dairy Queen or Bruster's. But I saw a really neat recipie and I think it was in Better Homes and Gardens. It used Ice cream sandwiches around the sides and looked so cool when it was done.

I would check their website. BHG.com they have a great recipie search and also foodnetwork.com has just about every recipie you could ever want.

good luck!

They still have them at Dairy Queen!

Sharon, here is the link to a very easy ice cream cake from Martha Stewart.
If it is too simple for what you were hoping to make, there are a few different versions on the website. All look soooooo good:hungry:

Bake a cake in a 9" round pan. let cool and wash pan.
take whatever flavor ice cream and form into pan. put in freezer to harden... after it has hardened take out and place on top of cake. Now take vanilla ice cream and 'icing' around the cake/ ice cream combo. ( you will have to keep putting in freezer to harden ).. keep doing this until you have formed a good layer around cake... decorate to your liking

you can also use two 9" cakes and place ice cream in middle.

This is the way I've always made mine.

Hope this helps

My son actually bought me an ice cream cake from Coldstone Creamery for Mother's day. They are very expensive, but since he works there, he gets them for half price. A small 4 inch one costs about $20 regular price.

Good luck making your cake!
