Chocolate Coca Cola Cake

--------------------------------------------------------------------------

Preheat oven to 350 degrees.

1. 3 tablespoons Hersheys coco (no I don't work for them)

2. 1 stick of butter

3. 1/2 cup shortening

4. 1 cup coca-cola

5. 2 cups sugar

6. 2 cups sifted flour (not flour sifted)

7. 2 eggs

8. 1/2 cup butter milk

9. 1 1/2 teaspoons vanilla extract (not imitation)

10. 1 teaspoon baking soda

11. 1 1/2 cups miniture marshmallows

Bring coco, butter, shortening and coco-cola to a boil.

Put sugar and sifted flour in a large bowl and add boiled mixture. Add eggs, buttermilk, vanilla and baking soda. Beat until well blended.
Pour into a greased and floured 9" by 13" pan. Spread the marshmallows evenly on top.
Bake 40-45 minutes or until toothpick comes out clean.

ICEING:

1. 1/2 stick butter

2. 1 1/2 Tablespoons cocoa

3. 3 tablespoons coca cola

4. 1/2 pound powderd sugar

5. 1/2 teaspoon vanilla extract (not imitation)

6. 1/4 cups chopped pecans or English walnuts

Heat first three ingredients to near boil, remove from heat and add last three ingredients and mix well.
Pour and spread over cake.

I always add a little more butter and coca cola to iceing mix to insure enough to go over cake. It's a thin coat. You may even want to double the batch and use what you need. Hey that way it leaves some for licking the bowl and spoon aye.

What does this make???

BTW How was your vacation?

oops, sorry! Layers of love brownies!

Vacation was good. Only one bad panic attack, on all the bridges going from Anna Maria Island into Tampa. Did good on the boat. I think between being busy, and doing a little bit of drinking (really, just a little ...), I was distracted enough. And apparently my hubby works as a pretty good safety zone. I was ready to get home to my baby though!Thank you for asking!

P.c. Chicken Rools

Pesto Chicken Rolls with Roasted Red Pepper Sauce

--------------------------------------------------------------------------

This is pretty good and easy.

4 boneless, skinless chicken breast halves
4 oz cream cheese
2 Tbsp. prepared pesto
1/4 cup chopped red bell pepper
1 cup corn flake crumbs

1 (7 oz) jar roasted red bell peppers drained
2 Tbsp heavey (whipping) cream
1/4 tsp. sugar
1/2 tsp. lemon juice

Heat oven to 375 degrees.

Place chicken breast between 2 sheets of waxed paper; pound with meat pounder until 1/4 inch thick. Repeat with remaining chicken. In a smal bowl mix cream cheese and pesto. Spread 1/4 of mixture on each chicken breast; sprinkle each with chopped red pepper. Roll up enclosing filling: secure with wooden picks or string. Coat rolls with corn flake crumbs. Place on greased 15x10x1 inch jelly roll pan. (I just used an 8x10 pan) Bake for 30 minutes or until chicken is no longer pink in center. Let cool 10 minutes. Remove wooden picks; slice. Serve warm or chilled.

Meanwhile, place roasted red peppers in food processor bowl fitted with metal blade; process until smooth. Add remaining ingredients; blend well. Place in a small saucepan. Heat unti warmed through over low heat. Season to taste with salt and pepper. Serve chicken rolls with sauce.

FootNote: If your careful you can minus string or toothpick thing, just put seam side down.

I double the cream cheese and pesto. that way you cand save whats left and on a later day add some cream with it until it makes a sauce. It makes an Alfredo type sauce to put over diced chicken noodles and a little celery.

Does anyone have a recipie for Cherry Crisp?

I know this is relatively easy to make, but I lost my recipie and every one I find online requires yellow cake mix or cereal. The one I used to make was w/ oatmeal.
Thanks in advance!!

That is funny that you ask that Crazy because I have searched for a recipe for Apple Crisp made with oatmeal and have not been able to find one. :verysad:

is this somewhat close to your recipe?

CHERRY CRISP

1 (21 oz.) can cherry pie filling
2 tsp. lemon juice
3 tbsp. light brown sugar
2 tbsp. all-purpose flour
1/4 tsp. ground cinnamon
2 tbsp. butter
1/2 c. regular oatmeal

Pre-heat an oven to 375 degrees.
Spray a 1 quart casserole dish with non-stick cooking spray.
Pour cherry filling into the casserole dish.
Stir in lemon juice then set aside.
In a food processor mix sugar, flour, cinnamon and butter until crumbly.
Add the oatmeal
Sprinkle over the cherries.
Bake in the oven for about 25 minutes until bubbly and browned on top.

sccrbrs6, that is pretty darn close!! Thank you so much! I also add 1 tsp of almond extract to the cherries instead of the lemon juice.

Snibble, that was one of the first places I looked. Thank you!

doublejs, when I make apple crisp, the recipie that sccrbrs posted is close to what I use. Give it a try!!

Anybody live in RI and have been to Greg's and had the Death By Chocolate cake?
I am looking for a recipe like that - although I dont know if it was only exclusive there....I looked it up on the website above but it wasnt the same

It is a cake and I remember it being TOTALLY covered on the outside with chocolate chips.
This is hubby's all time fave and his b-day is the 24th of July. I bought him one the first year we were married (today is our anniversary!) and it was $25!!!! And it weighed about 25 pounds!!! But it was the best cake we have ever had in our lives!!!!!!!!!!!

Any help would be very much appreciated

First off...Happy Anniversary!!:)

I've never been there, but I found this recipe one online. http://www.cacaoweb.net/deathbychocolate.html

I looked at a picture of Greg's cake online and it seems like their cake is 6 layers and then they add chocolate chips on the outside. Perhaps if this recipe is close (it sounds like it'd be a dense cake similar to Greg's) to the taste, you could just double it and then add chocolate chips when you're done frosting? I dunno.:noidea:

why did nobody mention that it says "reipes" and not "recipes"... first thing i thought of was the word "herpes", then "rabies"... and, well, certainly someone else's mind works like that...

yummy food, though :)
