Chocolate Coca Cola Cake
--------------------------------------------------------------------------
Preheat oven to 350 degrees.
1. 3 tablespoons Hersheys coco (no I don't work for them)
2. 1 stick of butter
3. 1/2 cup shortening
4. 1 cup coca-cola
5. 2 cups sugar
6. 2 cups sifted flour (not flour sifted)
7. 2 eggs
8. 1/2 cup butter milk
9. 1 1/2 teaspoons vanilla extract (not imitation)
10. 1 teaspoon baking soda
11. 1 1/2 cups miniture marshmallows
Bring coco, butter, shortening and coco-cola to a boil.
Put sugar and sifted flour in a large bowl and add boiled mixture. Add eggs, buttermilk, vanilla and baking soda. Beat until well blended.
Pour into a greased and floured 9" by 13" pan. Spread the marshmallows evenly on top.
Bake 40-45 minutes or until toothpick comes out clean.
ICEING:
1. 1/2 stick butter
2. 1 1/2 Tablespoons cocoa
3. 3 tablespoons coca cola
4. 1/2 pound powderd sugar
5. 1/2 teaspoon vanilla extract (not imitation)
6. 1/4 cups chopped pecans or English walnuts
Heat first three ingredients to near boil, remove from heat and add last three ingredients and mix well.
Pour and spread over cake.
I always add a little more butter and coca cola to iceing mix to insure enough to go over cake. It's a thin coat. You may even want to double the batch and use what you need. Hey that way it leaves some for licking the bowl and spoon aye.
